If you need a yummy and easy dinner idea, we've got something that'll keep the whole whanau happy. These quick and tasty caramelised pork tacos have the perfect combo of juiciness, zing and crunch.
If you don't have all the ingredients don't worry, just use what you have for the slaw, or why not add in some fresh avocado as a guacamole.
500g pork medallions cut into thin strips
1/2 small red onion, minced
2 cloves garlic, minced
2 teaspoons fish sauce
3 teaspoons Kai Ora 200+ Manuka Honey
2 teaspoons water
2 Tb Kai Ora Honey Chilli & Lime Dressing
1/4 cup mayonnaise
juice of 1 lime + lime wedges
salt and pepper to taste
1/4 cup roughly chopped coriander
1 bag of Coleslaw mix
1 pack of tortillas warmed
In a bowl mix together the sliced pork, red onion, garlic and fish sauce.
Heat frypan on medium-high, add oil to the pan, brown the pork turning occasionally, until cooked through, around 1-2 minutes. Add the honey and water, until the honey caramelises and turns golden brown, about 3 minutes, set aside.
In a small bowl mix together Kai Ora Honey Chilli and Lime Dressing with mayonnaise.
Serve caramelised pork with the warmed tortillas, coleslaw, salsa, generous amounts of coriander, the lime wedges and dollops of the Chilli Lime Mayo. Enjoy!
