Ingredients:
- 1 cup Kai Ora Honey Manuka
- 2 cups water
- 2 x Lemon juice (freshly squeezed) approx. 1/3 cup
- Zest of one lemon
- 2-3 tablespoons powdered gelatin
- 2 Kawakawa leaves (fresh or dried)
- 1 tablespoon Kumarahou leaves ( ideally dried)
Instructions:

Prepare the Kawakawa and Kumarahou infusion:
- In a small saucepan, combine 1 cup of water with the Kawakawa leaves and Kumarahou leaves.
- Bring the mixture to a gentle simmer over low heat and let it infuse for about 20 minutes.
- Strain the infused liquid through a fine-mesh sieve into a clean bowl. Give the leaves back to papatuanuku and set the infused liquid aside.

Bloom the gelatin:
- In a separate small bowl, sprinkle the powdered gelatin over 1/4 cup of cold water. Let it sit for about 5 minutes to bloom.

Prepare the Manuka Honey mixture:
- In a medium saucepan, combine the remaining 1 cup of water with Kai Ora Honey Manuka, lemon juice, and lemon zest.
- Heat the mixture over medium heat, stirring occasionally, until the honey is completely dissolved and the mixture is hot but not boiling.
