2 large eggs
2 cups/250ml milk
1 teaspoon vanilla extract
2 1/4 cups white self raising flour
Place all ingredients in a bowl and whisk together until smooth. Place a non-stick fry pan on medium heat and lightly grease with a knob of butter.
Pour in 1/3 cup of batter per pancake, and leave to cook for 1-2 minutes until bubbles appear on the surface, then flip and cook until the base is golden brown.
Transfer to a plate and place in a warmed oven while you cook the rest of the batter.
Serve warm. We like to serve ours with some fresh seasonal fruit, a dollop of whipped cream, and a generous drizzle of our delicious Kai Ora Manuka Honey.
NOTE: Optional Add-ins:
2-4 teaspoons sugar
1 teaspoon pure vanilla extract
1/3 cup chocolate chips
1/2 cup blueberries or raspberries
